Alex Bayer, founder of Genius Juice, first discovered the coconut smoothie through a friend who was a vegan chef. She was raving about a new creation using 'the whole coconut and nothing but the coconut.'
Alex decided to go back home and chop open a coconut (quite a dangerous task!). He then poured the coconut water into a blender, and scraped the coconut meat out as well.
He blended the two ingredients together. The taste and texture was nothing like he ever experienced before.
The first words out of his mouth were "This is GENIUS!"
After countless hours of trying different coconuts from all over the world, we settled on the Thai coconut. The tastiest, sweetest, most sought after coconut in the world.
We made our first batch for a marathon benefits event in Los Angeles. Runners bought our coconut smoothies and downed them instantly...and of course we sold out, and it was raining at the event too!!
From this moment, we knew we had something special on our hands, and we had to figure out a way to share this 'stroke of genius' with more people across Los Angeles and beyond!
On July 3rd, 2014, our coconut smoothies finally hit the store shelves. We soon quickly expanded into larger retailers such as Whole Foods.
We were so elated to finally launch our special product that was first blended in Alex's kitchen to the open market for everyone to enjoy.
